Sweet Potato Pecan Arugula Salad

Try out this yummy Sweet Potato Pecan Arugula Salad recipe! If you follow my Instagram account, you know that I love sweet potatoes. I eat them for breakfast lunch or dinner with a variety of different meals. It was my first time adding sweet potato to a salad and it was definitely a game changer! I absolutely loved the combo of the sweet potatoes, pecans, goat cheese and arugula. It is relatively simple with only a couple ingredients.

The dressing I used on the salad is Tessemae’s Organic Lemon Garlic dressing. “Tess-emae’s” is obviously what caught my eye and it is now my favorite salad dressing. I use the dressing on a variety of meals. It is great for salads, chicken, fish etc.. Definitely give it a try! Ingredients

  • Roasted Sweet Potatoes (prepped previously for the week)
  • - seasoned with garlic, pepper and parsley
  • Goat Cheese crumbles
  • Arugula
  • Pecans
  • Tessemaes Organic Lemon Garlic Dressing

Instructions

1.Prep your sweet potatoes on your meal prep day (if you have one) makes it easier to throw together this salad.

2. Add all ingredients together on your plate, drizzle with dressing and enjoy!
