Sweet Potato Hash with Brussel Sprouts and Sausage

Sometimes the best recipes come from the random leftovers you find in your fridge. Still drooling over this Sweet Potato Hash recipe. The fact that it’s also quick and easy, makes it even more amazing. You can definitely sub out some other veggies, meats or cheeses with this too. Also make this for dinner OR breakfast 🙂

Sweet Potato Hash with Brussel Sprouts and Sausage

Ingredients

  • 1 whole sweet potato
  • 1 cup of chopped dice brussel sprouts
  • 1/4 cup chopped onions
  • 1/4 cup chopped sausage
  • 2 eggs
  • Shredded mixed cheese
  • Seasoning: sea salt, garlic, red pepper flakes
  • Olive oil

Instructions

1. Heat up the skillet with a drizzle of olive oil at medium heat

2. Pour all veggies/meat on the skillet and let cook for 5 minutes

3. After veggies have started to cook and sizzle, make two open areas for the eggs. Crack the eggs inside the two designated areas in between the veggies

4. Sprinkle shredded cheese (lightly) over veggies and eggies

5. Let cook until the eggs are cooked through to your liking (I think them over medium with just a tiny bit of run off)

6. Use a spatula to scoop out your servings

7. Sprinkle some extra red pepper flakes for flava and enjoy!
