Grilled Shrimp Skewers

In CT, we’ve all been waiting for the nice weather to grace us with her presence. FINALLY! Sunshine and warmth!! This kind of weather always gets me excited to grill and have a drink 🙂

This recipe for shrimp skewers is the perfect easy meal to throw on the grill during those spring and summer months. You can easily bulk up the recipe for a larger group of people or make a smaller dinner for two.

My boyfriend and I paired this meal with a side salad but it would also go really well topped over a bed of rice!

Grilled Shrimp Skewers

Serves: 2 Cooking Time: 30 minutes

Ingredients

  • 1 bag of frozen shrimp (1lb), enough for 2 people
  • 2 bell peppers
  • 1/2 red onion
  • 1 cup of pineapple (can always add more if you like)
  • Sprinkle of Cajun Seasoning
  • Salt & Pepper
  • 1 lime
  • **Skewers needed

Instructions

1. After thawing out the shrimp, remove tails, rinse and set aside

2. Dice the peppers and onions into larger squares

3. Dice the pineapple into cubes

4. Add all ingredients to the skewers (I place the shrimp in between the pineapple and onion so it soaks up the most flavor and juiciness)

5. Once the skewers are set, sprinkle the cajun seasoning on top, salt and pepper, and squeeze lime all over them

6. Grill for approx. 15 minutes, depending on how charred you'd prefer them. Turn them halfway through.

7. Enjoy with a side salad or topped over some rice!
