This was my first time making meatballs and I took a crack at making them gluten free. Not to toot my own horn but I LOVED these and so did my guy.
We had a great little Saturday night by adding these to some Eat Banza chickpea pasta. This recipe makes enough for about 4 people. We had it for dinner last night and lunch today 🙂
Gluten Free Turkey Meatballs

- 1 pound ground turkey
- 1 large egg beaten
- 1/4 cup shredded parmesan
- 1/4 cup gluten free flour
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
- 1 jar of Vodka Sauce
Instructions
1. Preheat over broiler on high for 5 minutes
2. Combine all meatball ingredients into a large bowl
3. Mix all the ingredients using your hands
4. Use a spoon to scoop up a heaping spoonful of the meatballs and roll them into balls in your hand
5. Place them onto a cookie sheet covered in foil
6. Broil on the top rack for 5 minutes
7. In a cast iron skillet bring the vodka sauce to a low simmer
8. Transfer meatballs from oven into the skillet and simmer together for 5-10 minutes or until meatballs are completely cooked through
9. Optional: transfer the cast iron skillet back into the oven to broil for 2 extra minutes if you like the meatballs to be a little more browned on top
10. Serve with your choice of pasta and shredded parm on top
