Gluten Free Teriyaki Chicken

This gluten free teriyaki chicken recipe is by far one of my all time favorite meals to make. It’s easy to make in bulk for meal prepping or for a big family meal. While my fiancé and I lived with my parents during COVID quarantine, this gluten free teriyaki chicken was a staple in our house. It really is very easy to make since it is only a few ingredients. This makes it easy to whip up and grab everything at the store if you don’t know what to make for dinner. You also can easily substitute your favorite teriyaki dressing. I normally would use sky valley teriyaki sauce but have been having so much trouble finding it anywhere! If anyone knows where to find it, please let me know :). Other than that, most big name grocery stores will carry some type of gluten free teriyaki sauce, so definitely take a look.

The main thing I do first is I dice up the chicken into cube like shapes first. I then cook them over the stovetop before adding in the broccoli. Then I add a generous amount of teriyaki sauce into the skillet. Basically the chicken and broccoli is cooking in one skillet and your rice is cooking on the side. My favorite rice to pair this with is jasmine rice. Feel free to use brown rice or whichever style you prefer but I am going for that sticky rice texture with this recipe! Once the chicken and broccoli are done and they are smothered in teriyaki dressing, you scoop it over the rice and serve 🙂

HOT tips: add hot sauce or sriracha to the skillet while cooking for some extra heat to this meal! I also sometimes add some red pepper flakes to spice it up.

Ingredients

  • Broccoli
  • Jasmine Rice
  • Teriyaki Sauce
  • Chicken Breast
  • (optional):
  • Pepper
  • garlic powder
  • sea salt
  • hot sauce

Instructions

1. Coat skillet in olive oil and bring to medium heat

2. Cut chicken into cubes and then place on skillet to cook

3. While the chicken is cooking, cut up your broccoli

3. Once chicken is halfway cooked, add your broccoli into the skillet

4. Now drizzle the teriyaki sauce over the broccoli and chicken generously

5. Add sea salt, pepper, garlic power to taste

6. Serve in a bowl with cooked jasmine rice
