Gluten Free Chicken Radish Quesadilla

Ingredients

  • 1 Siete foods gluten free tortilla
  • Pre-cooked/prepped chicken (to make things easier)
  • Diced tomatoes, green & red peppers and onions
  • 1 radish thinly sliced
  • Shredded cheddar cheese
  • Dash of cumin & garlic
  • Topped with quickie guacamole:
  • 1 mashed avocado
  • Dash of garlic, sea salt and red pepper flakes

Instructions

1. Dice up your veggies and chicken (peppers, onions, tomatoes, radish)

2. Prepare the guacamole so it is ready to go

3. Heat up a skillet with olive oil (about a tbsp or enough to cover the skillet) on medium heat

4. Once heated, place tortilla onto skillet and cover one half side with cheese (the more the merrier)

5. Then add on your diced veggies ontop of the cheese

6. Sprinkle on your spices

7. Cover fixings with more cheese (MORE CHEESE!!!!) this help the other side of the tortilla to stick and keep everything together

8. Fold over the other side on top of all the fixings and flip over.

9. Each side should be a golden brown color before taking off the skillet (depending on how crispy you like it)

10. Plate it and top with your homemade guacamole and scatter any extra veggies around the plate

Notes

I used already prepped/cooked chicken, great for when you have left over chicken and not sure what to make with it
