Gluten Free Blueberry Muffins

These gluten free blueberry muffins were super easy to make and tasted delicious! I mixed the ingredients up in a blender, which made this recipe even MORE simple and fun to make. I decided to do both blueberry and chocolate chip. You could incorporate any kind of fruit or chocolate in these muffins to make them how you like! I also love adding the sprinkled sugar on top for that bakery bought muffin taste! I used to love that crunchy taste of the sugar on muffins from the bakery before I went gluten free. Now it is nearly impossible to find something similar that can be bought fresh. I love being able to create some of those simple pleasures at home. See the recipe below to make them yourself!!

Gluten Free Blueberry Muffins

Serves: 4 Cooking Time: 20

Ingredients

  • 1 cup peanut butter
  • 2 ripe bananas
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • Dark chocolate chips
  • Blueberries

Instructions

1. Preheat the oven to 400 degrees.

2. Add all ingredients to the blender until mixed well.

3. Pour mixture halfway up into the muffin tin

4. Bake for 8-10 min (use fork or toothpick to check for small moist crumbles)

5. Sprinkle some sugar over the top (optional) but recommended 🙂
