Fresh Fig & Arugula Gluten Free Pizza

Going gluten free and not being able to grab a pizza slice is honestly TORTURE. Since I’ve cut gluten out I’ve always been on the hunt for pizza shops, pizza crust, pizza toppings… basically anything to replace the piece in my heart for real, true, hearty pizza. Growing up in Connecticut, close to New Haven and NY we have some of the worlds BEST pizza (in my opinion). I’ve been able to find my favorite pizza spot in Stamford (Colony Grill) that has BANGIN gluten free pies. When I’m craving something with more fresh ingredients I like to create my own.

This recipe I used Against The Grain pizza crust. Depending on how you like your crust, this went PERFECT with the figs and arugula. The crust actually has a croissant texture and taste to it. Its delicious and a different spin on the regular crust. Try it out!

 


Fresh Fig & Arugula Gluten Free Pizza

Serves: 2 Cooking Time: 20 Minutes

Ingredients

  • 3 fresh figs
  • Against the Grain gluten free crust
  • 1 cup of Arugula
  • Fresh mozzarella cheese (I buy the ones that are shaped as a ball, like the size of a tennis ball and cut them in slices)
  • Garlic
  • Sea Salt
  • Red Pepper Flakes

Instructions

1. Preheat the oven to 375 degrees

2. Thinly slice your figs

3. Slice the fresh mozzarella into halves

4. Cover the crust with sprinkled sea salt & garlic

5. Place the mozzarella halves evenly on the pizza crust

6. Next top with the sliced figs and cover with arugula

7. Sprinkle the red pepper flakes on top

8. Let bake for 10minutes

9. Let cool, slice and enjoy!

Notes

This can be made for 2 people but I usually eat the whole PIE... 🙂
