Chicken Lime Cilantro Bowl

This fast, easy and addicting burrito bowl is my new favorite recipe for the summer. It only has a couple ingredients and can be made within 30 minutes. Great meal to cook up after a long day at work!

Ingredients

  • 1 Boneless chicken breast
  • 1 avocado
  • 1 box of rice (I used Lundberg Familiy Farms gluten free Spanish Rice)
  • Siggis Dairy Plain Yogurt
  • 1/2 a lime
  • 1/2 cup of cilantro
  • Salt, Pepper & Garlic powder for FLAVA FLAVE
  • 1 Tbsp Olive Oil

Instructions

1. Preheat the oven to 350 degrees

2. Lightly coat a baking pan with the olive oil, salt, pepper and garlic

3. Place the chicken on the mixture (making sure it gets coated in the oil and spices) then flip it to the other side for the same effect

4. Before putting in the oven, sprinkle some cilantro on top and a squeeze of lime

5. Bake for 25-30min - depending on the size/thickness of your chicken

6. While the chicken is baking, start cooking your rice (mine came with the Spanish spices) so all I had to do was add 1 &1/3 cup of water, drizzle of olive oil and then cook on the stove top

7. The chicken and rice should be done about the same time. Right before they are done start slicing up your avocado and lime

8. Serve chicken and rice hot with avocado on top, add an extra sprinkle of cilantro and a healthy dollop of Siggis Dairy Plain Yogurt as a substitution for sour cream. I swear this will be a game changer for your tacos, quesadillas, etc.. You can thank me later 🙂
