Broccoli Cheddar Quesedilla

Gluten Free Broccoli Cheddar Quesadillas

 

I am coming to find out that when I make recipes from whatever is left in my fridge they end up coming out really freakin good. I mean.. maybe not all the time BUT this one in particular is boombangin! Takes all of 10 minutes to cook this up and the ingredients are very simple. Easily substitute this recipe with flour torts, add meat, extra veggies or if you’re feelin crazy even MORE cheese. Enjoy my friends 🙂

Broccoli Cheddar Quesedillas

Serves: 1 Cooking Time: 10

Ingredients

  • 1. Missions gluten free tortillas
  • 2. Cheese (I used Horizon Organic shredded cheese)
  • 3. Finely chopped broccoli, tomatoes and onion. Depending on how many people you are serving you should only need a handful of each
  • 4. Cilantro for seasoning
  • 5. Olive oil

Instructions

1. Heat up the skillet on medium heat with a tablespoon of olive oil to coat the pan

2. Place the tortillas, open faced, on the skillet.

3. Coat 1 half of the tortilla with shredded cheese (leave the other side empty)

4. Evenly distribute your veggies (broccoli, tomatoes and onion) on top

5. I had some extra cheese on top of the veggies (I mean...you can NEVER have too much cheese)

6. Sprinkle the cilantro on top of the cheese

7. Fold the empty side on top of the loaded size and press down lightly with your spatula

8. Cooking for about 5 minutes each side on the skillet.

9. After each side is a golden brown with a little crispayyness, remove from skillet and serve with cilantro sprinkle on top

Notes

Depending on your CRISPY preferences, cook it for shorter or longer on each side. As long as all the cheese is melted you should be a-okay 🙂
