Gluten Free Breakfast Tacos!

You can never go wrong with a good breakfast taco in the morning! After taking my first trip to Austin, Texas I’ve always wanted to recreate a solid breakfast taco. If anyone’s been, or is from Texas, then you know what I’m talking about. We went to Taco Joint and their breakfast tacos were SO dang good! As I’m typing this, in the morning, I am seriously craving them.

These gluten free breakfast tacos I made will never compare to Taco Joint’s but a girl can try right? I threw this breakfast taco together while trying to clear out the fridge. Some days, the best meals come from a fridge clean out.

I always keep Sietefoods almond flour tortillas in the freezer. These are gluten free and delicious! Great alternative to flour tortillas. Added into the taco was 1 fried egg, a handful of spinach, guacamole, red pepper flakes and cholula sauce.

 

Gluten Free Breakfast Tacos

Serves: 1 Cooking Time: 5 minutes

Ingredients

  • 1 Siete Foods Almond Flour Tortilla
  • 1 Egg
  • Spinach
  • Guacamole
  • Red Pepper Flakes
  • Cholula Sauce

Instructions

1. Cook an egg on the cast iron skillet until crispy

2. Spread your guacamole (made the day before, but can be easily mashed up in a few minutes)

3. Top with a couple pieces of spinach

4. Drizzled with Cholula Sauce

5. Topped with red pepper flakes

Notes

**may take long if you don't have guacamole done. Or can substitute with sliced up avocado instead. ** guacamole includes tomatoes, onions, garlic powder, sea salt and red pepper flakes
