Bonne Maman Fig Spread, Arugula Pizza with Caramelized Onions and Gluten Free Crust

 

Once you go gluten free you tend to crave ALL the foods that you can’t have. Pizza is 100% one of the top foods I crave. I’ve been able to find some really good restaurants that offer gluten free pizza options and they are BOMB. Anyone that lives in the CT area knows about Colony Pizza, Mmmmmmm. Although, at home, I’ve been trying to tackle the pizza game myself, making it healthy and with some gluten free crust.

 

I love figs and goat cheese so lets throw them together, right?

 

When I cook I tend to throw things together instead of measuring. This is why baking is DEFINITELY a work in progress for me. Anyways, this pizza was made with Udis gluten free crust, goat cheese, Bonne Maman fig spread, caramelized onions & arugula. Basically the only cooking part is the caramelized onions so if you’re feeling lazy just throw raw onions on top instead 🙂

Serves: 2 Cooking Time: 20 Minutes

Ingredients

  • Gluten Free Crust (I used udis)
  • Fig Spread (Bonne Maman) - spread enough around the crust to cover it completely. I leave the edges bare so I can have the crust on the end.
  • Goat Cheese - I throw about a handful ontop but that depends on how big your pizza pie is. The more cheese the better, I always say so go CRAZY with that cheese
  • Arugula - again, I put enough on to cover the whole pie. Feel free to add more than you think because it will shrivel up a bit.
  • Onions - about half a cup of chopped onions. I throw them on the skillet with a swirl of olive oil, pepper, salt and some garlic and let those things get NICE and toasty

Preheat over to 425 degrees

Let it bake in the over for 8-12min (I usually check mine at 8 and then leave it in a little longer). Depending how soft or crispy you like your pizza.

Notes

This could be GREAT as a little dessert or even an appetizer. It's a sweeter pizza 🙂
