Sweet Potato Hash with a Poached Egg
This Sweet Potato Hash with a Poached Egg breakfast recipe was my FIRST time attempting to cook a poached egg. Happy to report that I did not mess it up! Was sadly extremely proud of myself. It’s the little things right?? This recipe is super hearty and a great alternative to the usual breakfast meals out there. Six ingredients are all it takes to make this meal happen! I’m all about simplicity with meals. It may look complicated and kinda fancy but in reality, it was easy peasy!
To Start
You’ll need to rinse and chop up your sweet potatoes into small cube sizes. Next dice up some onion and set aside your bag of kale. Drizzle some olive oil on your skillet ( I use a lodge cast iron skillet, you’ll see it listed on the bottom of this post from Amazon!). This skillet is AWESOME for cooking up veggies, my sweet potatoes and I love it for when I cook salmon. It offers more of a crispy flavor to a ton of my meals, which I LOVE.
Next, put your chopped sweet potatoes and onions into the skillet (with olive oil) and place on medium heat.
Poached Egg
As those are cooking, it’s time to POACH that EGG! Start by boiling water, once it comes to a boil, pour a tsp of vinegar in and stir the pot into a whirl pool (if you didn’t do this in a pool as a kid you totally missed out). Crack your egg into a bowl, scoop up your cracked egg with a wide cooking spoon. Slowly submerge it into the boiling water with a spoon and slowly release it in the water. Let cook for 3-4 minutes.
While your egg is cooking, toss the kale into the skillet with goat cheese crumbles, cracked pepper and parsley. Let the sweet potatoes get a little crispy on the edges.
Once everything is done, pour your sweet potato hash on a plate. Top with your FANCY AF poached egg!
The trickiest part is making the poached egg but once you get that down, it’s easy! Let me know how it comes out if you make it!
Sweet Potato Breakfast Hash with a Poached Egg

- 2 tbsp Olive Oil
- 1 tsp Vinegar (white distilled)
- 1 Sweet Potato (diced)
- 1/4 cup diced onion
- 1 egg
- Kale
- Goat Cheese
- Spices: cracked pepper, parsley
Instructions
1. Rinse and chop up your sweet potato and onion
2. Coat your cast iron skillet with olive olive
3. Put sweet potato and onions in the skillet and start cooking at medium heat.
4. Bring 2 cups of water to a boil and add in white vinegar
5. Crack your egg into a bowl.
6. Once water has boiled, scoop your egg up with a wide cooking spoon and slowly place it into the water
7. Let cook for 3-4 minutes.
8. While egg cooks - add kale, goat cheese, pepper and parsley to the skillet.
9. Once egg is done, scoop out and place on top of your sweet potato hash mixture
Notes
Sometimes I cut off some extra pieces of the egg whites on the side if it comes out too messy. Makes for a better presentation at least 🙂
