After feasting on Thanksgiving dinner I enjoyed a relaxing Black Friday. Spent the day with my mom, in our own town. We took Lily (my dog) for a walk around town. I grabbed a soy latte and we explored the bookstore. After we got home we put on some Christmas movies (my favorite is The Holiday) and I decided to bake! Being new to going gluten free, I wanted something easy and quick. They are gluten and dairy free!
These cookies are so simple and delicious. Only 6 ingredients!
Gluten Free Peanut Butter Cookies

- 1 cup creamy peanut butter (I used JIF)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 egg
Instructions

Preheat the oven to 350 degrees.

Line 2 cookie trays with parchment paper

Throw all the ingredients into a mixing bowl and stir until they are mixed thoroughly

Scoop out the dough and form them into balls a little bigger than a tablespoon size.

Then use a fork to make the hashtags on the cookie 🙂

Bake these bad boys for about 8-10 minutes until then center is slightly puffed up.

Cool for 5 minutes on the cookie sheet before serving
