Gluten Free Healthy Burrito Bowl

Yesterday, my boyfriend and I cooked up this tasty, Gluten Free Healthy Burrito Bowl. We’ve made a habit of going to the gym at 5:30 am every morning during the week. Throughout the day we stick to clean eating and drinking lots and lots of water. I’m SO proud of my guy for taking this step. I’ve always been into health and fitness but it hasn’t always been his thing. I never tried to push it on him so when he took it upon himself to get up each day and make the most of it by working out and eating healthy, I couldn’t have been more excited! Plus, we all know it’s so much easier to eat healthy when everyone in the household is on the same page.

This recipe came from our serious obsession with tacos. I’m surprised both of us haven’t turned into a human taco yet at this point. We opted to nix the shells and make a burrito bowl salad instead!

A key ingredient we always use to make our ground turkey is, Pacific Foods Roasted Red Pepper Soup. PROPS to my guy’s Momma because she’s the one who started this genius idea! Ground turkey doesn’t have as much flavor or juices as ground beef so adding this soup is a game changer! Try it out and let me know what you think!

We also LOVE Lundberg Farms (Gluten Free) Whole Grain Rice and Black Beans. Easy to make, healthy and SO good with a variation of meals.


Gluten Free Healthy Burrito Bowl

Serves: 2 Cooking Time: 25 minutes

Ingredients

  • - 1 Frozen packaged of Ground Turkey
  • - Cooking spray or olive oil (to coat the pan)
  • - 1 cup Pacific Foods - Roasted Red Pepper & Tomato Soup
  • - 1 tsp Sea Salt
  • - 2 tsp Pepper
  • - 2 tsp Garlic Powder
  • - 2 tsp Cumin Powder
  • - 1 tsp Chili Powder
  • - Fresh Cilantro
  • - 1 avocado
  • - 1/2 Iceberg Lettuce (chopped up)
  • - Cherry Tomatoes
  • - Rice ( I used Lundberg Farms Gluten Free Rice, linked above ^)
  • - Slice of lime
  • - Shredded cheddar/jack cheese (optional)

Instructions

1. I started with the rice first since it takes about 27 minutes ( follow directions exactly as on the box of rice) then start cooking the turkey as directed below.

2. Lightly coat a frying pan with olive oil or cooking spray and add in the ground turkey. Cook at medium heat.

3. Next add in all of your spices (sea salt, pepper, garlic powder, cumin powder, chili powder)

4. Lightly mix around the turkey and spices, breaking up the turkey so its in small pieces.

5. After it has cooked for about 1-2 minutes add in the Roasted Red Pepper & Tomato Soup. ( I add this in gradually as it cooks, so not all at once)

6. Cook until the soup has evaporated or has been soaked up into the turkey so it isn't runny at all.

7. While the turkey is cooking, chop up your tomatoes, avocado and lettuce

8. Once turkey and rice is done, pour both into a bowl and top with the lettuce, tomatoes, avocado, pieces of fresh cilantro and squeeze lime all over the bowl.

Notes

Feel free to sprinkle on some shredded cheddar/jack cheese, hot sauce or try some plain yogurt as an alternative to sour cream!
