Following a gluten free diet can seem like you are swimming in a constant sea of salads. When I go out to restaurants sometimes salads are the only option. At home I like to make them fun and filled with lots of goodies. Combining fruit, nuts and cheese is usually my go-to method to creating a satisfying salad. Although its summertime, this apple almond salad recipe has all the fall vibes going on. The apples and almonds with the goat cheese on top complement each other so well. Another source of protein could also be added to this salad such as grilled chicken or salmon. This time around I went without it and it was still delicious!
